Spicy Dr. Pepper (uh Thunder) Beef Jerky




This recipe is a family favorite.  If I ever get enough made to be able to take it to gathering (like game nights) to share, there is NEVER any left over, I hope you give it a try!

Spicy Dr. Pepper (uh Thunder) Recipe

EQUIPMENT

  • Dehydrator OR Oven (on lowest setting)
  • Medium saucepan
  • Whisk or Spatula
  • Knife and Cutting Board 
  • Measuring Utensils

INGREDIENTS

  • 1 to 1/2 pound beef, sliced (I prefer thin stir fry strips)
Marinade
  • cup Dr. Pepper soda, or the 7.5 oz can off brand
  • 1 tbsp Worcestershire sauc e
  • tbsp soy sauce
  • 1/2 tbsp kosher salt
  • 1/2 tsp garlic powder
  • tsp onion powder
  • 1/2 tsp ground black pepper
  • large jalapeno pepper, sliced 

INSTRUCTIONS

  • In a medium saucepan, combine all marinade ingredients other than the Jalapeno peppers. Whisk together until well combined.
  • Stir in the sliced jalapeno peppers and then bring the mixture to a boil over high heat.
  • Reduce the heat and simmer for approx. 15 minutes or until the mixture has thickened to a syrupy consistency and has reduced by about half.
  • Remove the marinade from the heat and allow the mixture to cool completely.
  • If using a different cut of beef, trim off any excess fat or connective tissue and slice into jerky strips 1/8 – 1/4 inch thick.
  • Place jerky strips into a bowl or large zip top bag and pour the cooled marinade over them. Stir or squeeze to distribute marinade, making sure the meat is coated evenly.
  • Refrigerate for 24 – 72 hours, stirring or squeezing the bag occasionally.
  • Lay the jerky strips out on paper towels to remove excess moisture. Blot tops of strips with paper towels, removing as much as possible.
  • Lay jerky strips on dehydrator trays with room between for air flow. Use as many trays as necessary.
  • Turn dehydrator on to highest setting and allow to dehydrate according to manufacturers directions, rotating trays periodically, dependant on what type of dehydrator you are using.
  • When jerky has been dehydrated to your desired texture, remove from trays and allow to cool. If you see fat pooling on top of the jerky, blot it with a paper towel.
  • Store in airtight container and put in refrigerator if not using within a few days.
